WHere is a home-style take on a beverage from a new cocktail list. It's a large-volume prepared mix which is loaded with flavours associated with festive period, making it excellent for a festive gathering. Save the extra citrus syrup for morning drinks, puddings, or to mix additional servings of the drink.

Makes enough for 10 people
To make the Clementine Cordial (makes 750ml)
300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g fine sugar
To make the Cocktail (makes 850ml, to serve 10)
400ml good quality vodka
100ml classic gin
150ml peach-flavored liqueur
200ml clementine syrup (see above)
Whole cranberries, to garnish
Mandarin essential oil, to finish
Instructions
Making the Citrus Syrup: Put the listed components inside a saucepan, bring to a gentle boil, mixing until the sugar dissolves. After that, remove from the burner allowing it to cool completely. Transfer into a sterilised bottle, cap it and refrigerate it chilled, where it will keep for around four weeks.
For the Batch Mix: Mix all the liquid ingredients into one large bottle, let it rest for one hour, then strain best through a fine cloth, making it fully clarified.
For serving: Pour 85ml of the batch mix to a stirring glass containing ice, gently stirring carefully for a minute to chill. Filter into a frosted cocktail glass or similar, decorate with some cranberries and finish using a light spray of mandarin oil above the glass.
